Quindío, Colombia

In Colombia’s central Andes, Quindío’s farms sit between 1,450–1,500 metres on volcanic-ash soils. Cool mornings and bright afternoons slow the ripening cycle, building dense cherries and clean structure. It’s a compact region with a long coffee memory: small valleys, short distances, and microclimates that reward patient drying.

Jairo Arcila

A third-generation producer with a maker’s mindset, Jairo treats each harvest like craft: selective picking, clean handling, and natural processing that lets the variety lead. At Santa Mónica, whole cherries dry with patience and intent, turning Quindío’s steady climate into clarity in the cup—no shortcuts, just considered work from farm to finish.
